Through guided tastings, aroma exercises and practical sensory activities, you'll develop a framework for understanding acidity, sweetness, mouthfeel and finish while building the vocabulary to describe what you experience in the cup. Whether you're a coffee enthusiast looking to deepen your appreciation or a hospitality professional wanting to sharpen your palate, this course will change the way you taste coffee.     Taste It Like You Mean It

    Train your senses in a fun and interactive way with the current World Cup Tasters Vice Champion and learn to taste coffee like it’s actually trying to tell you something. This is focused sensory training for reading coffee, decoding its little clues and figuring out what’s really going on in the cup. We’ll explore how to recognise, compare and identify key attributes, and learn where to focus your attention when tasting. You’ll leave tasting with more clarity, confidence and a better understanding of what you’re actually tasting.

    One Coffee, Three Drippers - How Design Shapes Flavour

    In this workshop, we will explore the geometric properties of three different drippers, their effects on extraction dynamics, and expression of flavour in the cup. It’ll be a workshop based on theory put into practice through interactive brewing and tasting experiments, to gain a better understanding of how different variables impact a brew and how to use them to perfect the outcome!

    How to enjoy your coffee

    Sometimes we get stuck chasing the perfect cup. We buy the “right” dripper, paper filters, lose our head on the latest coffee grinder, we carefully select the perfect minerals and brewing temperature. What we find in the end is usually disappointment and the feeling that we’re still missing something. In this workshop we’ll try to understand how to start enjoying coffee again, or if you’re a beginner how not to lose this curiosity to the endless variables that coffee brewing can have. We’ll try and understand what we like in coffee, and how to get there with no fuss and without pressure. Keeping it “senza pretese”.

    Una taza, cientos de decisiones: Errores, aprendizajes y todo lo que no se ve hasta llegar al Mundial

    En esta sesión compartiré el camino que me llevó a vivir las competiciones desde distintos roles hasta convertirme en Campeón de España de Baristas y representar a España en el World Barista Championship 2026. Hablaremos de decisiones, errores, cambios de estrategia, entrenamiento y todo el trabajo en equipo que existe detrás de una rutina de competición. Solo dos semanas después del Mundial, podremos mirar ese proceso con perspectiva: qué funcionó, qué no y qué aprendí de verdad durante el camino. Para cerrar, probaremos una versión de la bebida de autor que presenté en competición y llevaremos toda esa experiencia del escenario a la taza.
